It’s the season for friends and family, so why not gather around for a festive salad inspired by Christmas!
Haloumi, Cherry and Baby Spinach Salad with a Creamy Pesto Dressing
Dressing
250g Greek Yogurt
30ml Rocket Pesto
30ml Cream
Squeeze fresh lemon
Salad
5ml Olive oil
4 Haloumi sliced thick
100g Baby spinach leaves
160g Cherries (pitted)
60ml Pistachio nuts – shelled
1 Lemon cut into wedges
Method
Blend all dressing ingredients together
Heat olive oil in frying pan over medium heat and fry the haloumi until golden but tender
Lay the haloumi on the spinach with dressing and top with cherries and pistachios – serve with extra dressing on the side and lemon wedge to squeeze over the cheese
